Pine thyme is a variety of honey where the mixing of thyme with pine is done by bees.
It is a mixture of honey where the natural mixing of forest honey (pine honey) with thyme creates a special category of honey, a peculiar product, which combines the mild taste of pine honey with the intense aromatic profile of thyme and is characterized by the presence of Cretan plants.
The beekeepers after the harvest of the thyme transfer their bees to the pines and so on.
a) The aromatic substances of thyme which remain in the honeycombs are transferred to the pine honey.
b) In thyme the bees give birth, and so the thyme honey from the brood wreaths is harvested together with the pine honey.
c) there are areas of Crete where late thyme meets the honey secretions of pine, resulting in bees collecting and mixing pine and thyme.
The rare biodiversity of Crete is where that aroma and distinctive flavor are nested. This is the main characteristic of Cretan thyme honey and the key factor that Thyme honey ranks first in quality around the world. Our bees from mid-May are situated in Kissamos area, where we operate. Key locations are Cape Gramvousa, Elafonisi and Falasarna Ancient site where thyme plants thrive. Our primary concern is that the quality of honey is excellent and the above sites offer high quality and great honey flavor variation.
Apiculture as a family business started in 1963, when our father, Stelios Stathakis, obtained his first beehives and ran a successful course. After several years of continuous effort, along with love and passion for beekeeping, our family business passed on to the following generations which continue the production with the same passion and responsibility. We feel extremely fortunate to live in an island with such a special territorial morphology.
We are beekeepers, not formulators. We pack and release exclusively our own honey to the market. The quantities are limited and always depending on the number of the beehives we exploit along with the weather conditions. The route from the beehive to the jar is made with respect to the product, without undergoing alterations, and by always complying with the rules of hygiene.
