Corn muffins

 

Try this recipe and you will not buy muffins again. Very easy, fast and nutritious buns to accompany you in all your activities throughout the day.

 

Recipe by chef Vassilis Patsis

 

Ingredients:

 

3 tbsp. olive oil or vegetable oil of your choice

 

2 cups corn flour

 

1 tsp. baking powder

 

1/2 tbsp. sea ​​salt

 

1 large egg, organic

 

1,5 cup goat's milk

 

Fresh thyme (optional)

 

Instructions:

 

Preheat the oven to 190-200 degrees.

 

Place the oil of your choice in the mixer bucket with the egg and milk and beat lightly until smooth.

 

Mix the cornflour with the baking powder and salt in a medium bowl.

 

Now add the solids to the mixer bucket and beat again lightly until you get a nice dough.

 

Grease the walls of a muffin tray well and empty the dough thoroughly.

 

Bake until the buns are well puffed and well cooked inside (about 20 minutes). Allow to cool for 5 to 10 minutes before removing. Serve with thyme honey or plain or as you like.
